You just can’t beat meat on a stick. This is a very tasty Chicken recipe that can be quickly put together with Lemon and Artichokes on a skewers.
3 medium lemons (420g)
1/4 cup (60ml) olive oil
600g chicken breast fillets, chopped
2 x 400 cans artichoke hearts, drained, halved
24 button mushrooms
1. Squeeze juice from 1 lemon (you will need 2 tablespoons juice). Combine juice and oil in a jar and shake well.
2. Cut remaining lemons into 24 wedges. Thread chicken pieces, artichoke, mushrooms and lemon onto 12 skewers.
3. Cook skewers on heated lightly oiled grill plate (or grill or barbeque) until browned all over and cooked through. Brush with oil mixture during cooking.
