Fresh Tomatoes and Ricotta Sauce

Fresh Tomatoes and ricotta Sauce Italian food is without a doubt one of our most favourite, what a great flavour, versatile and something that is simple and easy to make at home.  Whereever possible when making your own sauces, make sure you use fresh ingredients.


550g Roma Tomatoes (ripe), Roughly chopped
15g onion, chopped
70g fresh ricotta, full cream
15g Grana Padano, grated
10g Pecorina Romano, grated
5g fresh parsley, chopped
1 tbs tomato concentrate or paste
3 tbs extra virgin olive oil
Salt & Pepper to taste


1. Heat oil in small pot. When hot, add onions and cook for 2-3 minutes, then add tomato concentrate and cook for a further 2 minutes.
2. Add fresh tomatoes and simmer for 10-15 minutes, add a pinch of salt and pepper.
3. Remove pot from heat, add all cheeses and parselt and blen with a hand mixer. Check Seasoning.
