I grew up eating fish cakes, there are so many different amazing recipes out there. Try this delicious Thai Fish Cakes recipe. You can have them for lunch, or they also work as a dinner meal.
- 500 g boneless fish fillets
- 3 level tbsp, cornflour
- 1 level tbsp, fish sauce
- 2 egg whites
- ½ cup coriander leaves
- ½ cup chopped shallots
- 1 cup dries breadcrumbs
- 4 level tsps. Red curry paste
- 2 level tsps. Sweet chilli sauce
- Plain flour for coating
Place fish pieces into a food processor and process a few minutes.
Add all remaining ingredients and process until a reasonably smooth consistency is reached.
Roll into 12 cakes then lightly coat in plain flour.
Generously spray a non stick fray pan with cooking spray, when hot, fry fish cakes until cooked on both sides. Serve with sweet chilli sauce (extra.)
