- 350g zucchini, grated
- ¾ cup flour
- 250g mixed vegetables, eg: capsicum, celery, diced carrot
- 1 ½ cups grated reduced-fat cheese
- ½ cup frozen peas
- ½ cup frozen corn niblets
- 2 eggs
- 3 egg whites
- 1 onion, diced
- 1 cup diced ham
- Salt and pepper to taste.
Preheat oven to 180degrees.
In a large bowl all the ingredients except the cheese.
Add 2/3 of the cheese to the mixture. Mix well.
Coat quiche dish with cooking spray.
Spoon mixture into dish, then sprinkle remaining cheese on top.
Bake 35-40 minutes or until golden brown.
Variation: To make Vegetarian omit the ham and add more vegetables.
